The Lancey onboarding sequence runs 14 days for all FOH new hires, with a 7-day extension (Days 15-21) for bar staff.
This article is the master index. Each day's article (linked below) is a self-contained checklist for that shift: what to read, what to do, what the coach watches for, and how the day ends.
Week 1 — Foundation (observation → first touches)
Week 2 — Full station, supervised
Week 3 — Bar specialty (bar staff only)
Post-release follow-up
Training shifts paid at full hourly rate. Tip share starts partial on Day 6 (when the trainee begins tabling under supervision); full tip share from Day 14 onward after coach sign-off. See training-overview for full policy.
The MOD adapts the sequence to the hire. A bartender with 10 years of experience can compress Week 1 to 3-4 shifts; a server new to hospitality may need a full Week 1 + extra shadow days. The structure is a guideline, not a script.
Coaches sign off at end of each day. Trainees who can't pass Day 14 standards (see training-pass-fail-standards) get a 7-day re-training window and a Day 21 retest before any role-fit conversation.
