Coach assigned. Trainee is given ONE table on the floor (or a 2-seat section at the bar if bartending). Coach is at-call, not on the table itself.

Trainee takes ONE table from greeting to settle. Coach observes from 6 feet away. Coach does not interject except to prevent a wreck. Trainee uses the handheld for the first time, rings in real food and drinks, presents the real check.
If it goes well, coach gives the trainee a second table mid-shift.
End-of-shift: trainee writes a 60-second self-debrief. Coach writes a 60-second observation. They compare notes.
30-minute debrief. Trainee's self-observation vs coach's observation.
Coach sign-off: Trainee completed at least one full table arc (greeting → settle) without significant error. Trainee can identify two things they want to do better tomorrow.
