Onboarding Day 7: Comp authority and recovery

Goal: Trainee understands comp authority, the empowerment framework, and recovery scripts. Day 7 MOD check-in.

Pre-shift

MOD pulls the trainee aside before family meal for a 15-minute conversation. How is Week 1 going? Any questions piling up? Anything confusing?

During shift

Trainee carries a second table. Coach now hands off more, only intervenes if a wreck is imminent.

MOD walks the trainee through the Toast comp procedure on a real or simulated comp (if no real one happens, MOD simulates with a $0 ring + reversal). Trainee operates the void/comp flow under MOD supervision.

Roleplay drill (15 min during a service lull): coach plays 3 scenarios:

  1. Guest's cocktail is wrong. Trainee handles.
  2. Guest waited 20 min for a first beverage. Trainee handles.
  3. Guest's allergy was missed and they got mild contamination. Trainee handles (and calls MOD).

What the coach + MOD watch for

  • Does the trainee invoke the comp ceiling correctly? ($50 bartender empowerment, MOD beyond that)
  • Does the trainee follow the framework: acknowledge → apologize → fix → tell MOD?
  • Does the trainee call MOD when the situation crosses the line (allergic reaction, fight, intoxication)?

End of shift — Day 7 MOD checkpoint

Run the Day 7 MOD checkpoint conversation. 30 minutes. The MOD goes through a structured review.

Coach + MOD sign-off: Trainee can run a recovery script without prompting. Trainee knows the comp ceiling. Trainee knows when to escalate to MOD.

Days 8-10: Full section, coach 30-min check-ins. Week 2 begins.
