Goal: The trainee can describe every dish on the menu in one sentence. Allergens identified. Modifications understood.

Pre-shift

The trainee arrives early — 60 minutes before family meal — for a kitchen walk-through with the chef or sous chef.

Read before shift

Every food article:

During shift

Chef walks the trainee through the line during pre-shift mise. Trainee tastes 5+ items at family meal — the burger, the fries, one yakitori, one salad, one starter (chef's choice).

During service, the trainee runs food (under coach supervision). Plates delivered from the left, cleared from the right. Trainee announces dishes by name when delivering.

End-of-shift quiz: coach asks the trainee to describe 5 random dishes. Each in one sentence. Each with the primary allergen.

What the coach watches for

  • Can the trainee name dishes confidently when running them to the table?
  • Did the trainee remember to check allergen marks on the ticket?
  • Did the trainee read the allergen response SOP carefully?

End of shift

15-minute coach debrief. 5-dish quiz. Pass/redo on the spot.

Coach sign-off: Trainee describes every dish in 1 sentence, names the primary allergen, names two reasonable modifications.
