Sign the IP agreement before reading. The recipe (MSG 2g · Saline 50mL · Absinthe 10mL · Vegetable Glycerin 40mL per 100mL yield) is confidential.

During shift

Trainee builds each menu drink in front of bar lead. Bar lead corrects spec, technique, garnish. Trainee builds the drink 3x until clean.

End-of-shift: random 5-drink quiz. Bar lead picks 5 menu drinks. Trainee builds each in real time to spec. Pass = within ±10% spec on every pour, correct garnish, correct glass.

What the bar lead watches for

  • Jigger discipline (every pour, no free-pouring)
  • Build order (spirits, modifiers, juice, syrup, bitters)
  • Garnish placed correctly per technique-garnish-program
  • Speed (each drink built in under 90 seconds for À la minute, under 30 seconds for draft pours)

End of shift

30-minute debrief.

Bar lead sign-off: Trainee builds 5 menu drinks back-to-back to spec.
