Three ice formats: 1) Kold-Draft 1.25" cubes for shaking and stirring (high density, slow melt, clean flavor). 2) Hand-cut 2x2" cubes for rocks glasses and Negroni/Old Fashioned/Boulevardier (visual statement, slowest melt). 3) Crushed ice for tiki, juleps, Bramble (Lewis bag and mallet if needed). Never use bagged grocery store ice in a finished drink. Bagged ice is only for icing-down kegs and chilling backups.
