Every shift opens with a 10-minute pre-shift, 30 minutes before doors.
Agenda:
- Reservations — MOD reads the night's VIPs, marks, and special-occasion tables aloud.
- 86 list — anything 86'd from the kitchen or bar today.
- Specials — new menu items, off-menu offerings, kitchen experiments.
- Allergens flagged — any guest with a marked allergen, read by name and section.
- Focus of the night — one specific thing we want to be better at tonight. Different each shift.
- Questions — open floor, 60 seconds.
Pre-shift is mandatory for all FOH staff. Arrive 30 minutes before doors in uniform, ready to meet. Late arrivals to pre-shift trigger the Corrective Action Framework.
