Tip pool calculated nightly: total tips ÷ total hours worked. Each FOH staffer gets their hours × hourly rate. BOH receives tip-out per state law and Lancey policy (TBD per current legal review). Payroll runs every two weeks. Tip log signed by all FOH each shift.
