Offer to take their phone number, text them when ready, suggest a drink at the bar in the meantime. 3) Is the wait over 45 minutes? Decline politely with 'I can't promise a seat tonight, but we'd love to see you Tuesday or Wednesday.' Never tell a walk-in 'sorry, we're booked' if there's a real bar seat available.
