Operations: how to use this section

ops #overview #all-staff

This section holds the daily-use operational paperwork. It's different from the training and SOP section — that's reference. This is the tick-box, print-it-out, do-the-thing layer.

What's here

  • Opening checklists by role (FOH, BOH, bar, host, MOD)
  • Closing checklists by role
  • DOH & Compliance — what to do the moment a Department of Health inspector walks in, plus prep that keeps us A-grade
  • Maintenance — daily, weekly, monthly, quarterly, annual schedules
  • EcoLab & Sanitation — chemical program, titration, service calls, sanitizer protocol
  • Templates — reusable forms for every shift

How to use a checklist

  1. Print at start of shift (or use the digital version on the tablet)
  2. Tick each item as completed
  3. Sign the bottom (initials + time)
  4. File in the daily ops binder at the host stand
  5. MOD reviews the day's stack at end of shift

Standards

  • No skipped boxes. If something doesn't apply, write "N/A" + initials.
  • No back-dating. If you missed a check, write "missed" + initials and tell MOD.
  • No anonymous checks. Every check needs initials.

The daily ops binder is the audit trail. If DOH walks in and asks "show me your maintenance logs" — that's where you point. Everything builds or diminishes.
