ops #overview #all-staff
This section holds the daily-use operational paperwork. It's different from the training and SOP section — that's reference. This is the tick-box, print-it-out, do-the-thing layer.
What's here
- Opening checklists by role (FOH, BOH, bar, host, MOD)
- Closing checklists by role
- DOH & Compliance — what to do the moment a Department of Health inspector walks in, plus prep that keeps us A-grade
- Maintenance — daily, weekly, monthly, quarterly, annual schedules
- EcoLab & Sanitation — chemical program, titration, service calls, sanitizer protocol
- Templates — reusable forms for every shift
How to use a checklist
- Print at start of shift (or use the digital version on the tablet)
- Tick each item as completed
- Sign the bottom (initials + time)
- File in the daily ops binder at the host stand
- MOD reviews the day's stack at end of shift
Standards
- No skipped boxes. If something doesn't apply, write "N/A" + initials.
- No back-dating. If you missed a check, write "missed" + initials and tell MOD.
- No anonymous checks. Every check needs initials.
The daily ops binder is the audit trail. If DOH walks in and asks "show me your maintenance logs" — that's where you point. Everything builds or diminishes.
