Quarterly maintenance — every 3 months. Schedule as a half-day project.

Major service calls

[ ] HVAC: vendor service call (filter change + coil inspection)
[ ] Walk-in: vendor service call (compressor + coils + drain line)
[ ] Hood + ventilation: vendor cleaning (kitchen)
[ ] Plumbing: walk-through with vendor for any slow drains, leaks
[ ] Fire suppression system (kitchen): vendor inspection — REQUIRED by NYC code semi-annually, doing it quarterly is safer
[ ] Pest control: deep treatment service

Equipment deep service

[ ] Yakitori grill: full disassembly clean
[ ] Espresso machine: vendor service (group head rebuild if needed)
[ ] Coffee grinder: blade replacement check
[ ] Glasswasher: vendor preventive maintenance
[ ] Dishwasher: same
[ ] Ice machine: vendor cleaning + filter change (equipment-ice-program-tools)

Refresh

[ ] All staff: refresher on emergency procedures (fire, medical, active threat)
[ ] All managers: refresher on cash handling SOPs (sop-cash-opening-bank, sop-cash-closing-reconcile, sop-cash-tip-pool)
[ ] Review staff handbook updates
[ ] Re-take handbook test for staff hired before last update (training-overview)
