When: Last 15 min of the night. MOD is the last person out.

Cash close-out

  • [ ] All bar/POS cash reconciled (sop-cash-closing-reconcile)
  • [ ] Variance < $5 = noted; < $20 = flagged; > $20 = call GM same night
  • [ ] All deposit envelopes sealed, signed, dropped in safe
  • [ ] Tip pool calculated, distributed per policy (sop-cash-tip-pool)
  • [ ] Comp report reviewed for anomalies

Daily logs

  • [ ] Daily ops binder updated:
    • [ ] FOH closing checklist filed
    • [ ] BOH closing checklist filed
    • [ ] Bar closing checklist filed
    • [ ] Host closing checklist filed
    • [ ] Incident reports filed (incident template)
    • [ ] Breakage log entries filed
    • [ ] Comp log entries (Toast report attached)

Equipment final walk

  • [ ] Walk-in cooler door tight, temp logged for shift end
  • [ ] Walk-in freezer door tight, temp logged
  • [ ] All hot equipment off (stoves, ovens, fryers, espresso, dish)
  • [ ] Yakitori binchotan extinguished safely
  • [ ] All bar equipment off, drains clear
  • [ ] Sonos off
  • [ ] All lights off except security

Building close

  • [ ] All exterior doors locked
  • [ ] Interior doors closed (office, walk-in, cellar)
  • [ ] Alarm armed
  • [ ] Day's keys retrieved from staff, secured

Tomorrow prep

  • [ ] Pre-shift note for tomorrow drafted (if needed)
  • [ ] Tomorrow's reservation snapshot reviewed
  • [ ] Maintenance items noted (sop-comms-written-feedback)

Sign-off

MOD: Time leaving:

If anything is amiss (alarm fault, equipment failure, missing money > $20, incident requiring police/insurance), call GM before leaving.
