Onboarding Days 8-10: Full section, coach check-ins

Goal: Trainee runs a full station with coach support. Pace, rhythm, recovery practiced under real load.

Pre-shift each day

Trainee assigned a full FOH section (4 tables) or full bar well, NOT both. Coach checks in every 30 minutes during service. Tip share is now full effective Day 8 (subject to MOD discretion on partial).

Read before each shift

By Day 8 the trainee has read the rules, the roles, the ethos, the SOPs. From here forward, reading is review or as-needed. Each shift the trainee picks ONE area to deepen (e.g., one day on SOP review, one day on rule review, one day on ethos review).

Daily recommended:

During shift

Trainee runs the section. Greeting, first beverage, food order, table maintenance, settle, turn. Coach observes silently from 8-10 feet away. Coach intervenes only on flagrant violation or imminent guest harm.

Mid-shift 30-min check-in: 60-second whispered debrief. "How's it going? Any tables giving you trouble? Anything I need to step in on?"

End-of-shift: 15-minute debrief.

What the coach watches for (across 3 days)

  • Pace under load (4 tables seated simultaneously)
  • Recovery when something goes wrong
  • Communication with kitchen, bar, host
  • Language tier maintained even under pressure
  • Anticipation (water refilled, table cleared, check ready before asked)
  • Mistake ownership (per sop-mindset-owning-mistakes)

End of each day

15-minute debrief. Coach writes a one-paragraph log entry. Trainee writes a one-paragraph self-reflection.

Coach sign-off (Day 10): Trainee can hold a 4-table section under load. Recovery rate above 80%. Pace acceptable. Coach is now stepping back to "on-call" status from Day 11 onward.
