The garnish does three jobs: aroma, visual, edible. Every garnish on every drink must do at least one of these. No garnish for show without function.

Technique standards

  • Lime wheels: 1/4-inch thick, scored, cut from equator, no seeds visible.
  • Lemon wheels: Same technique, slightly thicker.
  • Orange peel coins: 1×2 inch, expressed over glass, wiped on rim, DO NOT drop in (drink-specific — Lancey OF discards; other drinks may drop in).
  • Citrus twists (spirals): Long-pull with a channel knife or Y-peeler. Thin, no pith, springs back when released.
  • Mint bouquets: Pick 5-6 sprigs same height, slap between palms once to bruise, insert stem-down.
  • Coffee beans: Float on foam in a triangle.
  • Carbonated grapes: ISI whip with CO2, 1 hour before service. Or fresh green grapes day-of as alt.
  • Green apple slices: Bias-cut thin. Soak in lemon water 5 min. Drain dry before use.
  • Rim mixes: Wet half rim with appropriate liquid (lemon juice for sugar rim; lime for salt rim). Roll in mix on a small plate. Half-rim only — never full.

Visual cue check before send

Every drink gets a final visual check before leaving the bar:

  • Garnish position correct?
  • No spills on the rim or glass exterior?
  • Foam intact (if applicable)?
  • Color of drink matches expected?

If anything is off, remake. The visual check is the difference between a $25 drink and a $25 drink that looks worth it.
