(Mint Julep variation)

Add bourbon, demerara, Pocket Spice, and mint leaves to a julep tin. Fill with crushed/pebble ice. Swizzle until the tin frosts over. Top with more crushed ice. Add a drop of Angostura on the ice cap. Insert mint bouquet slapped between palms.

Lancey's Julep. Pocket Spice replaces the standard sugar-bitter complexity with the house blend. The Ango aromatic on the ice cap is the first thing the guest smells.
Julep tin, crushed ice (Lewis bag if no machine). The mint MUST be slapped — guests should smell it from across the bar. Serve with a metal straw.
Bracing, herbal, warming. Sip through the mint sprig — the aroma changes the taste.
