Build

Pre-batched base on Draft Tap 4 (see batch-borrowed-light for keg recipe). Pour the batched base over rocks in a Collins glass. TOP WITH DRAFT SODA AT THE POUR — do NOT batch the soda into the keg.

Story

Lancey's tequila highball. Aperol adds the bitter-orange spritz feel; the draft base means consistent dilution and ABV, with the soda hitting fresh at service.
