Spec

  • 2 oz Gin (Old Tom traditional; London Dry acceptable)
  • 1 oz Lemon Juice (fresh)
  • 0.5 oz Simple Syrup (1:1)
  • 3 oz Soda Water (top)
  • Lemon wheel, brandied cherry

Build

Shake gin, lemon, and simple with ice for 10 seconds. Strain into a Collins glass filled with fresh ice. Top with soda. Stir very gently with a barspoon. Garnish with a lemon wheel and a brandied cherry.

Story

1870s, attributed to John Collins of Limmer's Hotel London. Originally made with Old Tom gin (slightly sweetened pre-Prohibition style). Modern bars use London Dry without issue.

Service

Collins glass, fresh ice, soda hits at the end. Long, refreshing, low-ABV by cocktail standards.

Tasting

Bright, citrus-forward, lightly sweet, effervescent. Should drink like a quality lemonade with a gin lift.
