Spec

  • 3 oz Amontillado Sherry (or Oloroso)
  • 0.5 oz Simple Syrup (1:1)
  • 3 orange slices
  • Crushed ice

Build

Add orange slices and simple syrup to a rocks glass or wine goblet. Muddle gently to release the orange. Fill with crushed ice. Add sherry. Stir to integrate. Top with more crushed ice. Garnish with berries and a mint sprig (slapped).

Story

1830s-40s, American. Mentioned by Charles Dickens in Martin Chuzzlewit. The drink that introduced ice and straws to a generation of guests.

Service

Wine goblet or large rocks glass, crushed ice mounded, big garnish presentation. A garnish-forward drink — the visual is half the experience.

Tasting

Low-ABV, refreshing, slightly oxidative from the sherry. Should be a session drink, not a sipper.
