Tequila, lime, agave nectar. Shaken. Up or rocks. Salt rim optional.
Combine in shaker over ice. Shake hard. Strain into salt-rimmed rocks glass over fresh ice (or up in a coupe).
Garnish: lime wheel.
This is the Tommy's Margarita, popularized by Julio Bermejo at Tommy's Mexican Restaurant in San Francisco. Agave instead of triple sec. Cleaner, brighter, true to the tequila.
Always ask: rocks or up, salt or no salt, mezcal or tequila. Default: rocks, salt, tequila.
We do not use triple sec, Cointreau, or Curaçao on the standard margarita. If a guest specifically asks for "the classic margarita with Cointreau," we make it that way.
Bright. Agave-forward. The tequila is the star, not the sweetener.
