Spec

  • 1 oz Gin (London Dry)
  • 0.5 oz Lemon juice (fresh)
  • 0.5 oz Simple syrup (1:1)
  • 3 oz Champagne or Cava, top
  • Lemon twist

Build

Shake gin, lemon, and simple with ice for 10 seconds. Strain into a chilled flute or coupe. Top with sparkling. Stir very gently with a barspoon. Express lemon twist and drop in.

Story

Harry's New York Bar, Paris, 1915. Named for the French 75mm field gun. Sometimes made with cognac (the original argues) — we use gin per modern standard.

Service note

Flute or coupe. The sparkling is added last; never shaken into the drink.

Tasting notes

Bright, dry, effervescent. Celebratory. The lemon does the lifting.
