Batch: Pineapple / Falernum / Aperol

Our third menu batch. The tropical-bitter highball.

Spec (1L yield)

  • 250ml white rum (Plantation 3 Stars)
  • 250ml fresh pineapple juice
  • 150ml Velvet Falernum
  • 150ml Aperol
  • 100ml fresh lime juice
  • 100ml filtered water

Build (batch)

Combine all in a 1L bottle. Refrigerate. Shake before each service period.

Replace pineapple component every 2 days max. Pineapple oxidizes fast.

Service (per drink)

  • 4oz batch
    Pour into a Collins glass over fresh ice. Top with soda water.
    Garnish: pineapple frond, lime wheel.

Notes

The bitter from Aperol balances the tropical sweetness. Falernum adds clove and ginger underneath. The combo reads as "tropical but adult."
