Use: Lancey Old Fashioned, North Garden / Inheritance, Long Way Down, Before the Flood batch

Ingredients:

  • Equal parts Demerara sugar + water (1:1, NOT 2:1)

Method:

  1. Combine sugar and water in a saucepan.
  2. Heat over medium until sugar dissolves fully. Do not boil aggressively.
  3. Cool to room temperature.
  4. Bottle, label, date.

Cost: ~$0.05/oz (from grid).

Correction note: Pass 2 originally batched this as 2:1 (richer). The live beverage grid spec is 1:1 — the Pass 3 update reflects the working production ratio. If a bar lead specifies 2:1 for a specific build, follow that build's spec, but the default house Demerara is 1:1.

Yield in cocktails: ~64 cocktail uses per 750 mL at 0.25 oz pour.
