  • Skewers served on a stick, dipped, eaten standing or at patio tables

Charcoal

Binchotan-grade Japanese charcoal. $75 per 11lb. Low-smoke, high-heat, flavorless. The fat from the meat creates the seasoning, not the charcoal itself.
