At Day 14, the new hire meets with MOD + assigned floor coach. The review covers:
Must-pass items (any single fail = no release to full station):
- Greeting + first beverage standard (≤2 min)
- Reads the soigné mark before approaching a VIP
- Confirms allergies verbally with kitchen, every time
- Cocktail spec recall (any 5 random menu drinks, full spec)
- Comp authority understanding (knows the $50 ceiling and the empowerment framework)
- Handbook test: 80%+
Discretionary items (multiple flags trigger conversation):
- Pace and rhythm under pressure
- Language tier ('absolutely' vs 'no problem')
- Anticipation (water refilled before asked)
- Mistake recovery (acknowledges → apologizes → fixes → tells MOD)
Outcome:
- Pass: full station, full tip share, no more coach shadow
- Pass-with-watch: full station + coach checks in at 30-day mark
- Fail: 7-day re-training cycle, re-review at Day 21. If fails Day 21, role-fit conversation.
