At Day 14, the new hire meets with MOD + assigned floor coach. The review covers:

Must-pass items (any single fail = no release to full station):

  • Greeting + first beverage standard (≤2 min)
  • Reads the soigné mark before approaching a VIP
  • Confirms allergies verbally with kitchen, every time
  • Cocktail spec recall (any 5 random menu drinks, full spec)
  • Comp authority understanding (knows the $50 ceiling and the empowerment framework)
  • Handbook test: 80%+

Discretionary items (multiple flags trigger conversation):

  • Pace and rhythm under pressure
  • Language tier ('absolutely' vs 'no problem')
  • Anticipation (water refilled before asked)
  • Mistake recovery (acknowledges → apologizes → fixes → tells MOD)

Outcome:

  • Pass: full station, full tip share, no more coach shadow
  • Pass-with-watch: full station + coach checks in at 30-day mark
  • Fail: 7-day re-training cycle, re-review at Day 21. If fails Day 21, role-fit conversation.
