The Lancey training program runs 14 days for FOH new hires, with a Week 3 specialty deep-dive for bar staff.

Structure:

  • Week 1 (Days 1-5): Foundation — concept, drink builds, food knowledge, wine + beer basics, service flow, comp authority, difficult guests, napkinomics
  • Week 2 (Days 6-14): Full station with floor coach check-ins, daily debriefs
  • Week 3 (bar staff only): Cocktail menu deep dive + Pill program training

Pass criteria: Day 14 review with MOD. 80%+ on handbook test. Coach sign-off on full station readiness. Trainee can independently run a 4-table section or the bar well.

Re-test policy: Failed handbook test = 7-day study window, re-test. Failed coach sign-off = additional 7 days under coach supervision before re-evaluation.

Compensation: Training shifts paid at full hourly rate. Tips: trainees do not receive tips during shadow shifts; receive partial tips starting Day 6 when they begin tabling under supervision; full tip share starting Day 14 after coach sign-off.
