Why urgency
Urgency is napkinomics made concrete. The 90 seconds, the 2 minutes, the 5-to-7 minutes aren't arbitrary. They're the windows where guest patience holds and check averages stay healthy.
Urgency is not frantic. It's deliberate.
Key principles
- Move with purpose and grace. Never rushed or frantic.
- Hit every time standard, every time. If you're going to miss, communicate.
- Anticipate the next need. Water before they ask. Menus with the water. The check before they wave you down.
Reading list (in order)
- Water on every seat within 90 seconds
- First beverage order within 2 minutes
- Cocktails delivered in 5 to 7 minutes

Delivery
20 minutes. Walk the bar with the trainee. Time them through a mock service: greet, water, menu, order, deliver. Hit the 7-minute window from sit to first drink.
