Why napkinomics

Staff don't follow rules they don't believe in. They follow rules they can price. Every standard at The Lancey exists because the math works. The rules are not opinions. They are receipts from operators who already lost the money you are now keeping.

Key principles

A guest is a 90-minute revenue window. You either expand it or shrink it. Every touch either adds money or removes it. Nothing is neutral.

Reading list (in order)

  1. Greet every guest within 30 seconds
  2. Water on every seat within 90 seconds
  3. First beverage order within 2 minutes
  4. Cocktails delivered in 5 to 7 minutes
  5. Never say "I don't know"
  6. No phones on the floor
  7. Bar top stays pristine
  8. Never auction food

Delivery

This module is 45 minutes. Walk the trainee through each rule. Use the napkin math from the rule article. Ask: "Why does this rule make money?" Let them answer. Correct as needed.
