All citrus is juiced day-of, never the night before. Lemon yield: ~1.25 oz per medium lemon. Lime yield: ~0.75 oz per medium lime. Orange yield: ~3 oz per medium orange. Mexican-style elbow press for limes and lemons; CitrusMate or hand-press for oranges and grapefruits. Strain pulp through a chinois into labeled and dated quart containers. Hold in the speed-rail fridge below 40°F. Discard at end of service. Stale citrus tastes papery; fresh citrus tastes bright. Guests can taste the difference.
