Flaming a peel ignites the citrus oils for a brief flash of caramelized aroma. Hold an orange peel skin-side toward the drink, about 4 inches above. Hold a lit match between the peel and the drink. Pinch the peel to express oils through the flame — they ignite in a brief flare. Drop the peel into the drink. Used for Old Fashioneds, Manhattans, and showmanship moments.
