Milk-wash uses the acid-curdling-protein reaction to clarify a cocktail to crystal clarity while transforming the texture. Build the cocktail full-strength. Heat milk separately, then pour the cocktail INTO the milk (never the reverse). Curds form and trap solids. Strain through a Superbag or coffee filter overnight in the walk-in. Result: a clear, silky cocktail with milk's mouthfeel. Used for batched clear punches and special-event programs. Senior bartender-led only.
