Mezcal categories: Joven (unaged) — most common. Reposado (2-12 months oak) — softer. Pechuga (distilled with turkey/chicken breast) — Christmas tradition, complex. Añejo (1+ year oak) — rare. Agave varietals matter more for mezcal than aging: Espadín (workhorse), Tobalá (wild, floral, expensive), Tepeztate (vegetal, sharp), Madrecuixe (mineral). Know what you're pouring.
