Three mash bill categories on the back bar: 1) Traditional (~70% corn, 20% rye, 10% barley) — Buffalo Trace, Knob Creek. Balanced spice and sweetness. 2) High-rye (>20% rye) — Four Roses, Bulleit. Spicier, drier. Good for Old Fashioned and Manhattan. 3) Wheated (wheat instead of rye) — Maker's Mark, W.L. Weller. Softer, sweeter, lower spice. Good for sipping and Bourbon Highball. Know which is which when a guest asks 'what's the difference?'
