Compost bin in the BOH. Acceptable: citrus peels, mint stems, herb trim, vegetable scraps, paper napkins (clean), coffee grounds. NOT acceptable: meat scraps, dairy, oil, plastic. Compost picked up weekly by NYC organics service. Contaminated bins get rejected — train every staffer on what goes where.
