When a VIP-marked reservation arrives:
- Host confirms the mark, leads them to the table.
- Host gives a verbal handoff to the section's server and bartender. Quietly. "Hi [name], this is [guest], anniversary tonight."
- Bartender offers a complimentary first drink at GM discretion. Bubbles is the default.
- Server confirms allergens at the table, communicates to the kitchen by name not just seat number.
- MOD does a 30-second table touch within 10 minutes of seating.
Never announce the mark to the guest. They don't need to know they're marked. They need to feel taken care of.
