When a guest declares an allergy: 1) Server marks the allergy clearly on the ticket. 2) Server verbally tells kitchen lead. 3) Kitchen lead confirms verbally back. 4) Plate built on a clean surface with clean tools (no shared cutting board with allergen contact). 5) Plate delivered with a specific visual marker (e.g., chef pre-flags). 6) Server confirms with guest at delivery: 'this is your gluten-free preparation.' 7) Server checks back within 5 min. Documentation in allergy log.
