If a guest asks something you don't know — a wine note, an allergen, a cocktail spec, a kitchen capability — never say "I don't know," "I'm not sure," or "that's not my section."
Say: "Let me confirm that for you." Then find the answer immediately.
"I don't know" is a lost upsell, roughly $9 each. Three per shift across 5 shifts a week is $135 lost per bartender. $7,000 a year.
Beyond money: "I don't know" tells the guest they're talking to the wrong person. We are not the wrong person. We are the right person, and we will get the answer.
