When food is up at the pass, runner (often the server, sometimes a dedicated runner) brings it to the table. Confirm what's going to whom — 'who had the Henry Burger?' is better than guessing. Plates go down from the guest's left. Cleared from the right. Hot plate warning if applicable. The plate should be at the table within 90 seconds of being called up — cold food is the most common service failure.
