Present the bottle label-out to the host of the table for confirmation BEFORE opening. Cut foil at the second lip. Insert worm dead-center, perpendicular. Pull cleanly without breaking the cork. Pour a 1 oz taste for the host — wait for approval before serving the rest of the table. Stand at the table for the taste; don't drift off. Refill glasses when 1/3 remaining. Save the cork — some guests want it.
