Between rushes, check the well: spirits at par, citrus quart-containers at half, batches at usable level. Pull from BOH or notify barback to run. Mid-shift restock is faster than waiting for a desperate moment. If the well is below 60% par by 9pm, restock immediately. Speed during the 10pm rush depends on a stocked well.
