Spec is law. No 'about a count.' Jigger every pour unless it's a free-poured house cocktail with a documented build. Build in build order: spirits, modifiers, juice, syrup, bitters, ice, technique. Garnish last. Glass selected before you start the build. Mise en place clean throughout — no wet jiggers, no spilled syrup. The drink should look like the menu photo every time.
