Closing happens after last call. Sequence:
- Strain remaining ice into the dump well. Drain.
- Wipe down every bottle: top, neck, body.
- Restock the well from backstock for tomorrow.
- Wipe down the bar top, every inch, including under bottles.
- Empty and rinse the dump-and-rinse station.
- Polish glassware and put away.
- Tools to the dish pit.
- Final walkthrough with the MOD before you leave.
The venue must be immaculate before anyone leaves. Final walkthrough is mandatory.
