When a keg blows, the barback swaps the keg from the cellar within 2 minutes. The first 3 pours after a swap are foam — pour them into a glass, dump, and the line is ready. Check CO2 pressure. Log the keg swap with date and time in the keg log. Empty keg goes back to the cellar for vendor pickup.
