Pre-shift garnish prep: lemon peels (zester or Y-peeler), lime wheels (mandoline or hand-cut), orange peels (hand-cut), brandied cherries (decant from jar to ramekin, single-day's supply), pineapple wedges, mint sprigs (rinsed and held in damp paper towel). All garnish in labeled, dated, half-pint deli containers in the speed rail fridge.
