Pre-shift juicing: 2 quarts lemon, 2 quarts lime, 1 quart orange minimum for a Tuesday; double for Friday/Saturday. Mexican elbow press for lemons and limes. CitrusMate or hand-press for oranges. Strain pulp through chinois into labeled quart containers. Date with shift date. Discard at end of service — no overnight citrus.
