The Pill: Eastside

Gin, cucumber, mint, lime. Large-format in the pill vessel. Service for 4 to 6.

Spec (4-person batch)

  • 10oz gin
  • 4oz fresh lime juice
  • 3oz simple syrup
  • 12 cucumber wheels
  • 1 large bunch mint

Build

Muddle cucumber + mint in the mixing vessel. Add gin, lime, simple. Shake hard with ice. Double-strain into chilled pill vessel. Top with crushed ice.

Garnish

Massive mint bush on top, emerging from the vessel like a centerpiece. Cucumber wheel on the rim.

Service note

The mint is the show. Cut it tall so it stands out of the vessel. Guests inhale through the mint while drinking — most of the "mint flavor" is olfactory, not taste.

Tasting notes

Green. Bright. Cooling. A summer drink that works year-round at our climate-controlled patio.

Cost

Pour cost target: 15%. Selling price: $150 for 4 servings. Margin: $127.50.

Origin

Sasha Petrosky's Eastside cocktail. The drink that converted Jason from "cucumber? gross" to "give me ten of these."
