The final walk before service. Every section signed off below means the room is ready.

FOH walk

  • [ ] Floor: swept, mopped, dry
  • [ ] Tables: set, candles lit, salt/pepper full
  • [ ] Bar: clean, stocked, glassware polished
  • [ ] Host stand: tablet ready, reservation list printed
  • [ ] Restrooms: clean, stocked
  • [ ] Music: zones on at opening volume
  • [ ] Lighting: opening dim level

BOH walk

  • [ ] Walk-in temps logged
  • [ ] All stations mise complete, signed off by station cook
  • [ ] Yakitori grill at temp
  • [ ] Dishpit ready
  • [ ] Family meal complete; staff has eaten

Staff

  • [ ] All scheduled staff present or accounted for
  • [ ] Uniform check passed
  • [ ] Pre-shift held (sop-ops-pre-shift-meeting)
  • [ ] 86 list communicated
  • [ ] VIP/soigné marks briefed
  • [ ] Coach assignments if trainees on shift

Systems

  • [ ] Toast terminals online (all)
  • [ ] SevenRooms responsive
  • [ ] Bar phone working
  • [ ] CO2 pressure check on draft

DOH-readiness quick scan

  • [ ] All hand wash sinks: hot water + soap + paper towels
  • [ ] No food on floor
  • [ ] Sanitizer bucket at every prep station (test concentration randomly)
  • [ ] Allergen signage visible
  • [ ] Employee health policy visible
  • [ ] Manager certificate on display
