- [ ] Tables: set, candles lit, salt/pepper full
- [ ] Bar: clean, stocked, glassware polished
- [ ] Host stand: tablet ready, reservation list printed
- [ ] Restrooms: clean, stocked
- [ ] Music: zones on at opening volume
- [ ] Lighting: opening dim level
BOH walk
- [ ] Walk-in temps logged
- [ ] All stations mise complete, signed off by station cook
- [ ] Yakitori grill at temp
- [ ] Dishpit ready
- [ ] Family meal complete; staff has eaten
Staff
- [ ] All scheduled staff present or accounted for
- [ ] Uniform check passed
- [ ] Pre-shift held (sop-ops-pre-shift-meeting)
- [ ] 86 list communicated
- [ ] VIP/soigné marks briefed
- [ ] Coach assignments if trainees on shift
