Weekly maintenance — typically Monday or Tuesday morning before service.
Cleaning deep
- [ ] Deep clean walk-in cooler floor (out, scrub, in)
- [ ] Walk-in freezer floor scrape any ice buildup
- [ ] Hood vent filters cleaned (kitchen)
- [ ] All drains: enzymatic drain cleaner (bar AND kitchen)
- [ ] Glasswasher: descale and deep clean (glasswasher protocol)
- [ ] Dishwasher: descale and deep clean (dishwasher protocol)
- [ ] Espresso machine: backflush, clean group heads (equipment-espresso-machine)
Equipment check
- [ ] Walk-in compressor running quiet — log if loud
- [ ] All POS terminals: cleaning wipe, ensure responsive
- [ ] Toast cash drawers: lubricate if sticking
- [ ] Bar speed rails: deep scrub
- [ ] All thermometer probes calibrated (ice water test)
- [ ] Fire extinguishers: visual check, pressure gauge in green
- [ ] First aid kit: restock any depleted items
- [ ] Smoke detectors: test button on each
Compliance
- [ ] Self-audit (DOH self-audit)
- [ ] Pest control: confirm visit scheduled or completed
- [ ] Review week's incident reports — any patterns?
