Weekly maintenance — typically Monday or Tuesday morning before service.

Cleaning deep

  • [ ] Deep clean walk-in cooler floor (out, scrub, in)
  • [ ] Walk-in freezer floor scrape any ice buildup
  • [ ] Hood vent filters cleaned (kitchen)
  • [ ] All drains: enzymatic drain cleaner (bar AND kitchen)
  • [ ] Glasswasher: descale and deep clean (glasswasher protocol)
  • [ ] Dishwasher: descale and deep clean (dishwasher protocol)
  • [ ] Espresso machine: backflush, clean group heads (equipment-espresso-machine)

Equipment check

  • [ ] Walk-in compressor running quiet — log if loud
  • [ ] All POS terminals: cleaning wipe, ensure responsive
  • [ ] Toast cash drawers: lubricate if sticking
  • [ ] Bar speed rails: deep scrub
  • [ ] All thermometer probes calibrated (ice water test)
  • [ ] Fire extinguishers: visual check, pressure gauge in green
  • [ ] First aid kit: restock any depleted items
  • [ ] Smoke detectors: test button on each

Compliance

  • [ ] Self-audit (DOH self-audit)
  • [ ] Pest control: confirm visit scheduled or completed
  • [ ] Review week's incident reports — any patterns?
